These mini quiches can be served hot or cold and can be frozen - so very handy for kids lunch boxes. Children will enjoy making these with you as they can stir the mixture, roll the pastry and make the pastry circles.
Ingredients
- 1 pack of ready-made shortcrust pastry, or make your own. Puff pastry will also work.
- 2 eggs
- 200 ml milk
- 50 gram grated cheese
- pinch of pepper and herbs
- Your choice of fillings: Whatever you have in the fridge or pantry that your children will eat.
Suggestions: Sweetcorn, spring onions, chopped peppers, bacon, tuna, chopped cooked meat (ham, salami, chicken, chorizo etc) chopped mushroom, frozen peas.....
Method
- Preheat your oven to 180 C / Gas 4.
- Lightly grease the muffin tray (or bun tin) with butter.
- In a jug beat the milk and egg together.
- Prepare your fillings if necessary and grate the cheese.
- Using a glas or pastry cutter cut circles out of the pastry and place into the muffin cups.
- Put some grated cheese in the bottom of each pastry case, then add your fillings.
- Pour in the milk & egg mixture until it almost reaches the top of the pastry.
- Bake for about 20 minutes at 180 C/Gas 4 or until quiches turn light brown.
