This potato salad is quick and easy to make and as the name suggests it is vegetarian and also green in colour. Full of crunchy vegetables it is great as a side or main dish in your kids lunch box but would also be suitable to take to work.

Ingredients (for 3 smaller portions)

The ingredient list only serves as an idea as you can make it with any of your favourite vegetables or whatever you happen to have at home.

Potato salad in Kids Konserve leak proof, stainless steel food container

200 g peeled & boiled Charlotte potatoes (they taste yummy cold)

200 g mix of 3 different vegetables cut into squares. (e.g. cucumber, pepper & sweetcorn)

5-6 tbsp mayonnaise

2 tbsp green pesto

  1. Boil the potatoes until tender. Let them cool.
  2. Whilst the potatoes are cooling chop up the vegetables.
  3. Slice the cold potatoes.
  4. Add the potatoes to your mix of vegetables.
  5. Mix the mayo and pesto together.
  6. Gently cover the potatoes and veg in the mayo/pesto sauce.
  7. Add seasoning and sprinkle some seeds on top if you wish. Done!

I suggest you make this when you are having potatoes with your dinner as you can then quickly make it whilst preparing the evening meal.
