This potato salad is quick and easy to make and as the name suggests it is vegetarian and also green in colour. Full of crunchy vegetables it is great as a side or main dish in your kids lunch box but would also be suitable to take to work.

Towards the end of a term I always find that my kid's lunch boxes are looking increasingly samey. Yesterday my daughter told me that she is getting bored with carrot sticks and ham sandwiches and suggested I tried cucumber sticks and tuna sandwich instead.
