This potato salad is quick and easy to make and as the name suggests it is vegetarian and also green in colour. Full of crunchy vegetables it is great as a side or main dish in your kids lunch box but would also be suitable to take to work.

Ingredients (for 3 smaller portions)

The ingredient list only serves as an idea as you can make it with any of your favourite vegetables or whatever you happen to have at home.

Towards the end of a term I always find that my kid's lunch boxes are looking increasingly samey. Yesterday my daughter told me that she is getting bored with carrot sticks and ham sandwiches and suggested I tried cucumber sticks and tuna sandwich instead. Something has to be done as I normally take great pride in my lunch packing ability. (hmmm) But when it is leading up to Christmas and the to do list now spanning over two pages this is perhaps not the right time to get experimental in the kitchen. So here follows a list of some quick fixes that can liven up your children’s lunch boxes with very little effort and extra time from your part.

Since it is the British Sausage Week this week we have made our own sausage rolls for the children’s lunch boxes. I use the simple but delicious recipe from Fay Ripley’s cook book ‘Fay’s Family Food’. I like the idea of making my own as I can then get really good quality sausages from my local butcher and the kids love to give me a helping hand making them..
